Green chicken curry – Pollo al curry verde

I mentioned in one of my last posts my love for spices and that is why I am a big fan of Asiatic cuisine. One of my personal favourites is the Green curry. You cannot find green curry paste here either, so I had to make it from scratch which was lots of fun, but of course it does take a bit of time! To make this green curry I’ve adapted and mixed a thai and indian recipe trying to combine them in the best possible way.

In uno dei post precedenti ho parlato della mia passione per le spezie ed è per questo che sono grande fan della cucina Asiatica. Una delle mie ricette preferite è il curry verde. In Italia non si trova la pastella di curry verde già pronta, quindi ho dovuto prepararla da zero, il che è stato molto divertente anche se porta via un po di tempo! Per preparare questa ricetta ho preso l’ispirazione da una ricetta tailandese e da una indiana ed ho cercato di combinarle nel modo migliore.

Ingredients/ Ingredienti

1 kg Chicken – Pollo
1 (chopped) Onion – Cipolla (a pezzetti)
1/4 tsp Turmeric Powder – 1/4 cucchiaino di Curcuma
2 tsp Corriander Powder – 2 cucc. Coriandolo
1 tsp Cumin Powder – 1 cucc. Cumino
1 tsp Pepper Powder – 1 cucc. Pepe
1/2 tsp Garam Masala – 1/2 cucc. Garam Masala
1/4 cup Yogurt – 1 vasetto Yogurt
1/4 cup Coconut cream – 250ml Crema di Cocco
3-4 tblsp Lemon Juice – 3-4 cucchiai di succo di Limone
2 tblsp Oil – 2 cucchiai Olio
Salt, as needed – Sale, quanto basta

To grind/Da tritare
Cilantro – Citronella
Mint – Menta
4-5 Green Chillies – Chilli Verdi
3 Shallots – Scalogni
Ginger – Zenzero
Garlic – Aglio

Marinate the chicken for half an hour or more with the pepper, lemon juice and salt. Grind the ingredients listed above and try to add as little water as possible to them.

Fate marinare il pollo per una mezz’oretta con il succo di limone, pepe e sale. Tritate gli ingredienti elencati cercando di aggiungere il meno acqua possibile.

In a pan fry a little oil with the onion add the green paste and let it cook for about 10mins. Add the rest of the ingredients, fry it for a minute and then add the chiken.

In una padella fate soffriggere la cipolla con un po di olio, aggiungete la pastella verde e lasciate cuocere per una decina di minuti. Aggiungete il resto degli ingredienti, fate soffriggere qualche minuto e poi aggiungete il pollo.

Add water if necessary and let it boil until the chicken is cooked. Finally add the cream and let it simmer for a couple of minutes and then serve with some rice or naan bread (or both!).

Aggiungete un pò di acqua se necessario e lasciate bollire fino a quando il pollo sarà cotto. Infine, aggiungete la crema di cocco e lasciate andare a fuoco medio per qualche minuto. Servite con riso o pane naan (o entrambi!)

    Ooh yes, I’ve been wanting to make green curry this week! I will probably use some curry paste I bought last week though because I’m lazy and don’t want to waste 🙂

      Hehehe, it is a very time consuming process. If I lived in a country which sold the green paste, I probably would buy that myself 😉

    This is exactly how we make it back home in Goa…..and we grind the paste on a stone!!!! In Mumbai however , we use the grinder !!! One of my favourites ….soul food on a blue day!

      You have just made my day! So glad to hear that this is actually how you do it back in Goa! I would love to try grinding the paste on stone! I hope one day to visit your country.. It’s one of my dreams!
