I just got back from a wonderful holiday in New York, I have lots of photos to share but will do that in the next post as I need to sort them out first. So, for today I will share with you my attempt at making choux pastry. It’s not particularly difficult but it can be tricky if you’re not careful at all the steps. The first round I didn’t really heat the dough enough and as a result the beignets came out as flat as the Salar de Uyuni (this place is considered the flattest area on earth and yes, I did google “flattest area on earth” to find it out). So the following batch I spent at least 10 mins heating the dough on low fire and in fact, the beignets did rise a little more in the oven. Sono appena rientrata da una bellissima vacanza in quel di New York, ho molte foto da condividere ma lo farò nel prossimo post, prima le devo sistemare un pò. Quindi, per oggi condividerò con voi il mio tentativo di preparare la pasta choux. Non è particolarmente difficile ma può bisogna fare abbastanza attenzione ai vari passaggi. La prima prova d’impasto non ho cotto a sufficienza l’impasto sui fornelli e di conseguenza i bigné non si sono gonfiati in forno e sono rimasti piatti come il Salar de Uyuni (questa è la superficie più piatta della terra e si, ho proprio cercato su google “luogo più piatto della terra”). Dunque, ho tentato una seconda volta, cuocendo l’impasto per almeno una decina i minuti a fuoco basso ed infatti, una volta in forno, i bigné si sono gonfiati un pò di più. INGREDIENTS/INGREDIENTI
Choux Pastry – Pasta choux
50ml milk – latte
200ml water – acqua
50g butter – burro
120g flour – farina
4 eggs – uova
salt – sale
Chocolate ganache – Ganache al cioccolato
250ml fresh cream – panna fresca
250g dark chocolate – cioccolato fondente
Cream filling – Crema pasticcera
500ml milk – latte
4 yolks – tuorli
40g corn flour – maizena
150g brown sugar – zucchero di canna
Vanilla extract – vanillina
Lemon peel – scorza di limone
In a pot pour the milk, the water, the butter and a pinch of salt. Bring to the boil until the butter is melted add the flour and mix vigorously then take away from the heat. Once it’s homogeneous place back on medium fire for a couple of minutes. Once it has thickened turn off the heat and let it rest a few mins. Add the eggs, two at a time, whisking vigorously (when it’s thickened, I heated this a little on medium fire and then let it rest).
In una pentola mescolate il latte con l’acqua, il burro ed un pizzico di sale. Portate ad ebollizione fino a quando il burro sarà sciolto, aggiungete la farina e mescolate per bene poi togliete dal fuoco. Continuate a mescolare fino a quando avrete un impasto omogeneo, rimettete sul fuoco e mescolate fino a quando l’impasto non risulterà denso. Spegnete e lasciate riposare qualche attimo. Aggiungete le uova (due alla volta) e mescolate vigorosamente fino a quando non otterrete un impasto denso (riscaldate un po a fuoco medio e poi lasciate riposare).
With the help of a spoon, form little balls which you will place on a baking sheet and into the oven at 200°C, after 6/7 mins, lower the temperature at 190°C and cook them until golden brown.
Con l’aiuto di un cucchiaio create delle palline e ponetele su di un vassoio ricoperto con carta da forno, poi infornate a 200°C, dopo 6/7 minuti abbassate la temperatura a 190°C e cuocete i bigné fino a quando risulteranno dorati.
Once cooked you can let them cool while you prepare the filling and the ganache.
For the ganache: heat the fresh cream in a pot and bring to boil then add the chocolate and mix until the chocolate is completely melted. Important: always add the chocolate to the cream (or milk) and never the other way around, it will not blend in together due to the fats contained in the cream/milk.
For the cream: heat the milk, lemon peel and vanilla in a pot. In another container mix the yolks with the sugar until the mixture results clear and fluffy. Then to the yolks mixture add the corn flour and mix well. Once the milk is hot, filter to remove the lemon peel and add it slowly to the yolks mixture, whisking well and add it back on the fire at medium heat, heat longer for a thicker cream.
Una volta cotti lasciateli raffreddare mentre preparate la crema e la ganache.
Per la ganache: riscaldate la panna in un pentolino fino ad ebbollizione, aggiungete la cioccolata e mescolate per bene fino a quando non sarà completamente sciolta. Importante: aggiungete sempre la cioccolata alla panna (o latte) e ma il contrario in quanto i grassi della panna non faranno amalgamare il composto.
Per la crema pasticcera: riscaldate il latte con la vanillina e la scorza di limone. A parte mescolate i tuorli con lo zucchero fino a quando il composto non risulterà chiaro e spumoso. Poi aggiungete la maizena al composto di tuorli e mescolate per amalgamare bene. Una volta che il latte è caldo, aggiungetelo al composto e mescolate bene per evitare grumi, riscaldate a fuoco medio. Più tempo riscaldate, più risulterà densa la vostra crema.
I had lots of chocolate ganache, so I used part of it to make some chocolate mousse simply by whipping some fresh cream and then adding the ganache to it.
Cool the beignet in the fridge for at least an hour so that the ganche hardens.
Avevo molta ganache dunque una parte l’ho utilizzata per fare una mousse semplicemente montando un po di panna fresca e poi aggiungendoci la ganche.
Lasciate raffreddare i bigné in frigo per ciò che la copertura di ganache si solidifichi.

I really like the addition of lemon in the cream. I made these last week in my croquembouche and they were a bit rich. I got gruyere at the store today, so hopefully I will find time to make some gougeres. Choux is so yummy 😀
Yea the lemon helps to take away the eggy taste a little, I always find it’s a good idea to add some =) Choux is awesome, and it’s so amazing how versatile it is, you can make it sweet or savoury and not go wrong! I saw your croquembouche on your blog, they look fantastic! The caramel decoration is really good =D
