I never thought attempting a cheesecake recipe in Italy would be so challenging, but I’m glad in the end it turned out well! You might be wondering why challenging. Let me explain. First of all I used an American recipe, so the first challenge was figuring out what the cups measurements would be in grams, which is what I usually work with. The next challenge was finding ingredients. “Sour cream”, “Graham crackers”, “corn syrup”… these are just a few ingredients not easily found in supermarkets here, but with some imagination I used some alternatives which worked out as well! Check it out!
Non avrei mai pensato che prepare una cheesecake in Italia sarebbe stata una sfida, ma sono felice che alla fine sono riuscita nel’impresa! Vi chiederete perchè una sfida. Lasciate che vi spieghi. Inanzi tutto ho utilizzato una ricetta Americana, dunque la prima avventura è stata convertire le dosi dalle “cups” americane ai grammi. La seconda parte della sfida è stata trovare gli ingredienti. “Panna acida”, “Graham crackers”, “corn syrup”… questi sono solamente alcuni ingredienti difficili da trovare qui, ma con un pò d’immaginazione sono riuscita a trovare alternative che hanno funzionato perfettamente! Date un occhiata!
INGREDIENTS/INGREDIENTI
CHEESECAKE:
16 Digestive biscuits (crushed) – 16 Biscotti “Digestives”, sbriciolati
4 tablespoons butter (melted) – 4 cucchiai di burro sciolto
250g cream cheese – 250g formaggio philadelphia
300g of sugar – 300g di zucchero
3/4 cup of milk – 3/4 tazza di latte
4 eggs – 4 uova
1 cup of sour cream (I could only find normal cream, but it turned out well too) – 1 barattolo di panna acida (io ho trovato solo panna normale, ma è venuta buona lo stesso)
1 tablespoon of Vanilla extract – Vanillina
40g Flour – 40g di farina
TOPPING/SALSA
100g of butter – 100g burro
250g of brown sugar – 250g di zucchero di canna
300g of syrup (I used Agave syrup) – 300g sciroppo di Agave
2 tablespoons of water – 2 cucchiai di acqua
350/400g of condensed milk – 350/400g latte condensato
Vanilla extract – Vanillina
First of all crush the biscuits into small crumbs and mix them with the melted butter. Grease a 22cm (9inch) pan and press onto the bottom.
Sbriciolate i biscotti e mescolateli con il burro sciolto. Imburrate una tortiera di 22cm, versateci le briciole ed appiatite per bene.
In a large bowl, mix the cream cheese with the sugar until smooth. Blend in the milk and the eggs, one at a time mixing just enough to incorporate. Next add the sour cream, vanilla and flour until it’s all smooth. Pour the filling on the prepared crust. N.B. it will be quite liquid, that’s ok, it’ will fix whils baking!
In una terrina a sponde alte, mescolate il formaggio con lo zucchero fino ad ottenere un impasto liscio. Aggiungete il latte e le uova, una ad una mescolando solo il sufficiente per farle incorporare. Dopo aggiungete la panna acida, la vanillina e la farina ed amalgamate per bene fino a quando non ci saranno più pezzetti. Versate l’impasto sulla crosta di biscotti preparata in precedenza. N.B l’impasto sarà alquanto liquido, è normale, si sistemerà cuocendo!
Bake in preheated oven (170°C) for 1 hour. Turn the oven off and let it cool in there with the door closed for a few hours to prevent craking. Once taken out, remove the golden/overcooked bits and then chill in the refrigerator until serving.
Cuocete nel forno caldo (170°C) per 1 ora. Spegnete il forno e lasciatela raffreddare all’interno del forno con la porta chiusa per un paio d’ore, questo serve ad evitare che si spezzi. Una votla tirata fuori, rimuovete le parti “bruciacchiate” e riponetela in frigo fino a quando la porterete in tavola.
TOFFEE SAUCE/SALSA TOFFEE
In a saucepan over medium heat, melt the butter and stir in the brown sugar, the syrup, water and the condensed milk. Cook and stir for a few minutes until the mixture thickens. Remove from heat and stir in the Vanilla. Let it cool and then pour on top of the cheesecake.
In un pentolino medio, sciogliete il burro (a fuoco medio), poi aggiungete lo zucchero, lo sciroppo, l’acqua ed il latte condensato. Mescolate e lasciate cuocere fino a che la miscela sarà un pò densa. Togliete dal fuoco e aggiungete la Vanillina. Lasciate raffreddare e poi decorate la cheescake.
